You'll probably need to learn music theory before you can start composing tbh

Makes it alot easier but all you need is knowledge to read notes and probbably tweaking the bpm (beats per minute; speed of song) and note lengths in order to achieve shorter notes. (shortest note in gt is a crotchet; quavers don't exist)

every 8 blocks forms an octave from a to g. Fair enough. lower octaves are reachable with bass notes.

Composing in gt is actually converting. Just find suitable sheet music and literally copy down most notes. prioritise the main melody for the section you want to copy (copying a whole song is almost always impossible; tho repeats do help) and then add chords and bass afterwards. If notes overlap on a block use an audio rack (e.g. for octaves).

Composing isn't the same thing as "converting"/transcribing.

When you wrench yourself, it tells you what note you are standing on. You should learn audio racks tho, you just place the block and type in all the notes you want it to play. The block has instructions built-in.
