1/100 chance, 1%chance each surg you will get a 5 epc drop. Going by the common assumption

It depends on whether u have the rolequest maxed out or not. Do not do the role quest once you reach the Lvl which gives u EPC. This will increase ur chances of getting EPC rather than the other things that drop.

I have done thousands of surgeries and I'd like to assume its definitely in between 1-2%, maybe 2% but my luck has been bad lately lol

False. Epc drops as an extra on top of whatever surgery reward you recieve.

A quick visualisation: Everytime you complete a surgery, a rng is spun for 1-100.
For this example, you've unlocked EPC and Bio-Waste
In order to get epc, you'll have to roll a 1, and to get bio waste you'll have to roll a 2-6.
Therefore when the rng is rolled, if you get none of the numbers you get no extras, but if you get a number under any of those items you get them.
Simply put, even if you don't have tiled staircase, slippery slime, bio waste etc, the chance of epc dropping is still the same, as the rng spun will still have the same percentage chance of getting the epc, except if you've unlocked more items, when it doesn't land on epc it can land on others.

If you role 16.6666 dices, it is possible to get a 1/100 chance

no i mean, since the probabilities of each drop are independent of one another, why would you use the same die to figure out the drops of each? Wouldnt separate dice (seperate rngs) be used to determine whether each one drops?

They are not independent as far as I know, you can't get 2 role drops from the same surgery.

I would rather picture it as one dice, with 100 sides (possible outcomes), one roll. and each number represents a reward (or no reward), depending on which number it falls on you get a reward or you don't.
    I am big noob.
    I had 5 DLs , now I have 2.
I joined #teamloss, and lost my soul.
losing WLs forever, that's what I do.
